Grapes are picked over five harvest days from the coolest, chalkiest plots to capture a full range of aromatics. The juice is gently pressed with no skin contact, then fermented with native yeasts in large barrels. Aged on the lees without racking, fining, filtration, or added sulfur. The result is a laser sharp, pink hued white wine with floral spice, finesse, and purity.
